The Gastronorm trays (GN), the tendency is to work with stainless steel, are governed by pre-established measures. Dimensions in Europe approved according to EN-631. Being a fixed size, to allow use in different electrodoméstricos and furnishings such as refrigerators, ovens, water baths, trolleys, cabinets, etc.
The dimensions are based on models of GN 2.1, equal to 650x530 mm, and GN 1/1, the equivalent of 530x325mm. From these, the others are removed by successive divisions. Thus obtained models GN 2/3, 1/2 GN, GN 1/3, 1/4 GN GN GN sixth and ninth. As a proportion of other models, different models can be stored in the space of one. That is, in a gap of 1/2 we can save two buckets of 1/1. In the space of a bucket of 1.1 we can keep three trays or we can save 1/3 of 2/4 and three sixth. They can thus make various combinations.
These dimensions GN fixing what is the width and length. The depths they can vary. So, we can have different trays or buckets for the same GN model, which differ in their depth. Usually seven would talk profunidades: 10 mm, 20 mm, 40 mm, 65 mm, 100 mm, 150 mm and 200 mm.
The Gastronorm measures commonly used in the catering trade much because it allows to optimize kitchen space, being all kitchen appliances with dimensions set out in GN.
Although it is usual that GN are made of stainless steel and without handles. You may also find in the market or perforated trays with handles, with optional lid, or manufactured in other food materials and plastic, polycarbonate or polypropylene.
